A delicious pie that melt in your mouth.
• 1c wheat flour. Or you can use half graham flour, half wheat.
• 100g butter
• 5 tbsp cold water
• 0,5 tbsp salt
• 450g frozen spinach or 800g fresh spinach.
• 1 red onion
• 0,35 c black olives
• 3 tbsp oil, I prefer olive but any other will do just as well.
• 1 clove of garlic
• 200g of goat cheese
• 4 eggs
• 0.9 c cream
• Salt and white pepper

Set oven to 392 f. Thaw frozen spinach and squeeeze out all the water. Cut the butter into pieces and knead together with the dry ingredients and the water. Form a dough and let it rest 30 minutes. Then you dress the mold with it and make small holes using a fork. Bake the crust for 10 minutes.
Chop the onion and fry it on low heat for about 3-4 minutes in the oil without taking colour. Add fine chopped garlic and larger chopped spinach. Let it fry for 3 minutes before spreading this mixture on to the crust. Then add the (chopped) goat cheese and olives.
Mix egg, cream and seasoning. Pour it over the filling and cover with grinded cheese.
Bake in the bottom of the oven for 15 minutes and then lower the heat to 347 f. Bake another 15 minutes. The eggs shall set and the colour should be nice. Most important of all, let the pie cool slightly before serving as this will bring all the flavours to bloom.
