•1.2 tbsp salt
•1 tbsp cumin
•1 tbsp anis or fennel
•1.8 cup luke warm water
•1.8 cup of beer, preferable as dark and rich as possible, luke warm
• 2.8 cup rye flour. The sort you prefer
•6 cup wheat flour
•0.5 cup honey
•100 grams room temperatured butter or margarin.
Do like this:
Allow the butter to be room temperatured and cut it into dices. Mix all ingredients 20 minutes by hand or 10 with a baking machine. Then leave it to rise, well covered for 60-70 minutes. Then fold the dough a couple of times before leaving it to rest for another hour.
On a workbench sprinkled with flour cut 4 or 5 pieces and shape them into beautiful loaves. (I’m using baking paper underneath) here is where I sift some flour over and using a really sharp knife, cut patterns before I let them rest for another 60 minutes.
Set the oven at 482 F. The loaves shall bake in the lower part of the oven. Set the alarm at 10 minutes. thereafter you lower the heat to 392 F and bake for another 25 minutes.
